Ingredients

  • 1.5 lb kielbasa sausage
  • 2 medium yellow onions
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp whole-grain mustard

    Slice kielbasa into 0.5-inch thick rounds. Cut onions in half, then slice into 0.25-inch-wide wedges.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Add kielbasa rounds in a single layer. Sear 3 minutes until edges crisp and edges darken, then flip and cook another 2 minutes.

    Transfer kielbasa to a plate. Keep heat at medium, add onions and salt to the skillet.

    Cook onions, stirring occasionally, until soft and golden brown, about 8 minutes. You'll smell sweet caramel notes.

    Return kielbasa to the skillet, toss with onions, and cook 1 minute until heated through. Taste and adjust seasoning.
