Ingredients

  • ½ lb ground pork
  • 16 count round dumpling wrappers (store-bought)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger, grated
  • ¼ cup scallion, chopped

Instructions

  1. 1

Stir ground pork with soy sauce, sesame oil, ginger, and scallion until combined.

  2. 2

Spoon 1 tbsp filling onto each wrapper, wet edges with water, fold in half, then pinch corners to seal.

  3. 3

Heat 1 tbsp neutral oil in a 12-inch skillet over medium-high until shimmering, about 60 seconds.

  4. 4

Add buns flat-side down. Don't move them—let the bottoms crisp, 3 minutes, until golden brown.

  5. 5

Add 1/4 cup water, cover immediately, and steam until wrappers turn translucent, 3 to 4 minutes.

  6. 6

Uncover and cook until water evaporates and bottoms re-crisp, about 1 minute more.
