Ingredients

  • 8 links Nürnberger bratwurst (small pork sausages)
  • 1 large onion, sliced into thin half-moons
  • ½ cup german lager or pilsner beer
  • 2 tbsp whole grain mustard
  • ½ tsp caraway seeds
  • 1 tbsp olive oil

Instructions

    Heat oil in a 12-inch cast-iron skillet over medium-high until shimmering, about 90 seconds.

    Arrange bratwurst in a single layer. Sear without moving for 3 minutes until golden on bottom.

    Roll each bratwurst with tongs and sear the next side for 3 minutes.

    Push bratwurst to the sides. Add onion to the center and cook, stirring, for 3 minutes until softened.

    Pour beer into the skillet. Add caraway seeds and mustard, stirring gently to combine.

    Simmer for 4 minutes until beer reduces slightly and bratwurst reaches 160°F internally.
