Ingredients

  • 1 lb ground pork
  • ¼ cup all-purpose flour
  • 1 whole egg
  • ½ medium onion, finely minced
  • 2 tbsp dijon mustard
  • 2 medium fresh tomatoes
  • 1 small red onion
  • 2 tbsp fresh parsley or dill, chopped

Instructions

    Mix ground pork, flour, egg, minced onion, mustard, 0.5 tsp salt, and 0.25 tsp black pepper in a bowl until just combined.

    Form mixture into 8 patties (about 2 oz each), each roughly 2.5 inches wide and 0.75 inches thick.

    Heat 3 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Pan-fry patties in two batches, 4 minutes per side, until golden brown and cooked through. Transfer to a plate.

    Slice tomatoes and red onion thin. Toss with 1 tbsp oil, salt, pepper, and fresh parsley.
