Ingredients

  • 1 lb pork shoulder, ground
  • ½ cup breadcrumbs, panko or fresh
  • ½ medium onion, finely minced
  • 1 tbsp fresh sage, chopped
  • ¾ tsp black pepper, coarsely ground
  • ½ tsp ground allspice
  • ¼ tsp ground nutmeg
  • 1 tsp salt
  • 2 tbsp olive oil

Instructions

    Combine pork, breadcrumbs, onion, sage, pepper, allspice, nutmeg, and salt in a bowl.

    Mix with your hands until just combined—don't overwork. Divide into 4 equal portions.

    Form each portion into a long rope, then coil into a tight spiral about 3 inches wide.

    Heat oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Slide sausages into the pan—don't move them for 4 minutes until the bottoms turn deep golden.

    Flip each sausage carefully with a spatula and cook 4 more minutes until browned on top.
