Ingredients

  • 1 lb biała kiełbasa (Polish white sausage), sliced 1/2-inch thick
  • 1 medium yellow onion, sliced thin
  • 2 tbsp German mustard or whole-grain mustard
  • ½ cup beer (lager or pilsner)
  • 2 tbsp fresh parsley, chopped
  • ½ tsp caraway seeds (optional, traditional)

Instructions

    Heat oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Add sausage slices and sear without stirring for 2 minutes until golden on one side.

    Flip each slice and sear 1 minute more until browned; push to the side of the pan.

    Add onion to the center of the pan and cook, stirring, until softened and lightly caramelized, 3 minutes.

    Stir in mustard and caraway seeds, then pour beer around the pan to deglaze.

    Toss sausage and onion together, simmer for 1 minute, then scatter parsley on top and serve.
