Ingredients

  • 200 g digestive biscuits (or graham crackers)
  • 4 tbsp butter, melted
  • 150 g dark chocolate, chopped
  • ½ cup porter or stout beer
  • 1.5 cup heavy cream, divided
  • 3 tbsp granulated sugar
  • 1 tbsp cocoa powder
  • ½ tsp vanilla extract

Instructions

    Crush biscuits into fine crumbs in a bowl, then stir in melted butter until the mix resembles damp sand.

    Divide biscuit crumb mixture among 6 jars or glasses, pressing gently into the bottom of each as the base layer.

    Combine chopped chocolate and porter in a microwave-safe bowl, then microwave in 30-second pulses, stirring between each, until smooth.

    Let chocolate cool 2 minutes, then whisk in 0.75 cup heavy cream and vanilla until thick and mousse-like.

    Spoon chocolate mousse evenly over biscuit layer in each jar, then chill while you whip the remaining cream.

    Whip remaining 0.75 cup cream with sugar until soft peaks form, then dollop onto each cup and dust with cocoa powder.
