Ingredients

  • 4 oz dark chocolate (70% cocoa), chopped
  • 1 cup heavy cream
  • ¼ cup Irish porter or stout beer
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract
  • ¼ tsp sea salt

Instructions

    Pour beer into a small saucepan and simmer over medium heat until reduced to 3 tablespoons, ~4 minutes. Smell it—it'll get darker and more concentrated.

    Add chocolate to the hot beer off heat and let sit 1 minute, then stir until smooth and glossy.

    Pour the chocolate mixture into a clean bowl and cool for 2 minutes.

    Whip cream, sugar, vanilla, and salt in a separate bowl until soft peaks form, ~2 minutes.

    Fold chocolate into whipped cream gently with a spatula until just combined—no streaks.

    Divide between serving glasses or bowls. Top with cocoa powder or a tiny pinch of fleur de sel if you have it. Serve cold.
