Ingredients

  • 12 cookies Biscoff cookies
  • 3 tbsp butter, melted
  • 8 oz cream cheese, softened
  • ½ cup Biscoff spread
  • ¼ cup powdered sugar
  • 3 tbsp Biscoff spread for topping

    Crush 9 Biscoff cookies into crumbs using the bottom of a glass or by pulsing in a food processor.

    Mix crushed Biscoff crumbs with 3 tbsp melted butter until the texture resembles wet sand. Press into a small square baking dish or 8x8 pan.

    Beat softened cream cheese with 0.5 cup Biscoff spread and 0.25 cup powdered sugar until smooth and fluffy, about 2 minutes.

    Spread the cheesecake mixture evenly over the crust layer and smooth with a spatula.

    Crumble the remaining 3 Biscoff cookies over the top and drizzle with 3 tbsp Biscoff spread.
