No-Bake Berry Panna Cotta

Ingredients
- 1.5 cups heavy cream
- ½ cup sweetened condensed milk
- 2 tsp gelatin powder
- 1.5 cups fresh berries (raspberries, blueberries, strawberries)
- 2 tbsp honey

Pour 2 tbsp cold water into a small bowl and sprinkle gelatin over it. Let sit for 1 minute until bloomed and spongy.

Heat heavy cream in a saucepan over medium until tiny bubbles form at the edges, about 2 minutes. Remove from heat.

Stir bloomed gelatin into hot cream until completely dissolved and smooth, about 30 seconds. Whisk in condensed milk.

Divide panna cotta mixture evenly among four serving glasses or bowls. Chill in the freezer for 12–15 minutes.

While panna cotta chills, mash two-thirds of the berries with honey until jammy, then fold in remaining whole berries.
