Ingredients
- 2 lb beef sirloin or tenderloin, cut into 1-inch cubes
- 3 tbsp vegetable oil
- 1 tsp salt
- 1 cup roasted unsalted peanuts, finely ground
- 2 tbsp cayenne pepper
- 1 tbsp paprika
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp ground coriander
- 1 tsp salt
- ½ tsp black pepper
- 2 whole fresh lime wedges
- ½ medium onion sliced red onions
- ¼ cup fresh cilantro or parsley, chopped

Soak wooden skewers in water for 30 minutes. Thread beef cubes onto skewers, leaving small gaps between pieces.

In a shallow bowl, combine ground peanuts, cayenne, paprika, ginger, garlic powder, onion powder, coriander, salt, and black pepper. Mix well.

Brush beef skewers with oil and season with salt. Heat grill or grill pan to medium-high heat (about 400°F).

Grill skewers for 10-12 minutes, turning every 2-3 minutes, until beef is charred on edges and cooked to medium (internal temp 160°F).

While beef is still hot, roll each skewer in the suya spice mixture, coating generously on all sides. The heat will help the coating adhere.

Transfer suya to a serving platter. Garnish with chopped cilantro and sliced red onions.
