Ingredients
- 1 lb ground pork or beef
- 2 tbsp fish sauce
- ½ cup fresh cilantro and Thai basil, chopped (divided)
- 3 cloves garlic, minced
- 3 tbsp lime juice
- 1 whole cucumber, sliced
- 1 loaf or batch crusty bread or sticky rice

Mix ground meat, fish sauce, 1/4 cup herbs, garlic, and salt until just combined. Form into 12 meatballs.

Thread meatballs onto metal skewers, 3 per skewer. Heat grill or grill pan over high until very hot.

Grill skewers 2 minutes per side, turning once, until browned and cooked through (160°F internal).

Whisk lime juice with 2 tbsp water, remaining herbs, and a pinch of salt. Pour into a small bowl for dipping.
