Ingredients

  • ¾ lb chicken breast, boneless
  • ¾ lb beef sirloin, lean
  • ½ cup creamy peanut butter
  • ½ cup coconut milk
  • 3 tbsp soy sauce
  • 1 whole lime, juiced
  • 3 cloves garlic, minced

Instructions

  1. 1

Soak 12 wooden skewers in water for 15 minutes to prevent burning.

  2. 2

Cut chicken breast and beef sirloin into 1.5-inch cubes. Thread onto skewers, alternating meats.

  3. 3

Season skewers generously with salt and black pepper on all sides.

  4. 4

Heat a grill or grill pan to medium-high until a drop of water sizzles on contact.

  5. 5

Grill skewers 3 minutes per side without moving until meat is cooked through and edges char.

  6. 6

While meat cooks, whisk peanut butter, coconut milk, soy sauce, lime juice, and garlic in a bowl.

  7. 7

Pour sauce into a small saucepan and warm over medium heat, stirring occasionally, 3 minutes.

  8. 8

Transfer skewers to a serving plate and drizzle with warm peanut sauce.
