Nigerian Suya (Spiced Beef Skewers)

Ingredients

  • 1.5 lb beef sirloin or ribeye, sliced 1/4-inch thick
  • ½ cup unsalted roasted peanuts, finely ground
  • 3 tbsp red chili powder (cayenne or African chili)
  • 1 tbsp paprika
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp lime or lemon juice
  • 1 pinch salt and pepper to taste

Instructions

    Pat beef strips dry with paper towels. If strips are thicker than 1/4 inch, pound gently to even thickness.

    Combine peanuts, chili powder, paprika, ginger, and garlic in a shallow bowl, stirring well.

    Mix olive oil, lime juice, salt, and pepper in a separate bowl.

    Add beef strips to the oil mixture, tossing to coat evenly. Let sit 10 minutes at room temperature.

    Remove beef from oil. Roll each strip in the peanut-spice mixture, coating both sides generously.

    Heat a grill, grill pan, or cast iron skillet over medium-high until very hot, ~2 minutes.

    Working in batches to avoid crowding, lay beef strips on the grill without moving them for 90 seconds.

    Flip strips and cook another 60 seconds until charred at edges but still tender inside.

    Transfer cooked suya to a plate. Repeat with remaining beef strips.

    Serve hot with fresh lime wedges and chopped onion and tomato on the side if desired.
