Ingredients
- 2 cups cooked jasmine rice (cooled)
- 1 tsp turmeric powder
- ¼ lb ground beef
- ¼ lb shrimp (peeled, deveined)
- 2 tbsp red curry paste or sambal oelek
- ½ cup coconut milk
- ⅓ cup crispy fried onions
- ¼ cup fresh cilantro (chopped)

Heat 2 tbsp oil in a large skillet over medium-high. Toss rice with turmeric until yellow, ~2 minutes.

Push rice to the side. Add ground beef to the empty space, break into small pieces, cook until no pink, ~4 minutes.

Add shrimp to the beef, stir-fry until pink and cooked through, ~2 minutes.

Stir in curry paste until the meat and shrimp are coated, about 30 seconds.

Pour in coconut milk, gently fold everything together until rice is warm and curry coats all, ~1 minute.

Divide into bowls, top with crispy onions and cilantro. Serve hot.
