Ingredients
- 3 cups cooked white rice (from 1 cup raw)
- 2 cans (15 oz each) canned black beans, drained and rinsed
- 1 large yellow onion, sliced thin
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp white vinegar
- 1 tsp ground cumin
- 1 whole lime (for serving)

Heat olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Add sliced onions. Sauté, stirring occasionally, until golden and soft, about 6 minutes.
