Ingredients

  • 3 cups cooked white rice (from 1 cup raw)
  • 2 cans (15 oz each) canned black beans, drained and rinsed
  • 1 large yellow onion, sliced thin
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp white vinegar
  • 1 tsp ground cumin
  • 1 whole lime (for serving)

Instructions

    Heat olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

    Add sliced onions. Sauté, stirring occasionally, until golden and soft, about 6 minutes.

    Add garlic and cumin. Stir until fragrant, about 30 seconds.

    Stir in black beans and vinegar. Cook until warmed through, about 2 minutes.

    Push bean mixture to the side of the skillet. Add rice to the empty space and warm it, stirring gently, about 2 minutes.

    Serve warm. Squeeze fresh lime over each bowl and pass hot sauce at the table.
