Ingredients
- 1.5 lb lamb leg or shoulder, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tsp paprika
- 1 tsp ground cumin
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 lemon lemon wedges, for serving

In a large bowl, combine 3 tbsp olive oil, 2 tsp paprika, 1 tsp cumin, 3 minced garlic cloves, 1 tsp salt, and 0.5 tsp black pepper. Mix into a paste.

Add 1.5 lb lamb cubes to the marinade and toss until well coated. Cover and let sit at room temperature for 15 minutes, or up to 2 hours in the fridge.

Thread the lamb onto skewers, dividing evenly. If using wooden skewers, soak them in water for 30 minutes first.

Preheat a grill or grill pan over high heat. Cook the skewers for 8-10 minutes, turning occasionally, until nicely charred on all sides and cooked to your liking (internal temp 145°F for medium-rare).
