Kashmiri Seekh Kebab

Ingredients

  • 1 lb ground lamb
  • 1 medium onion
  • 2 cloves garlic
  • 1 inch ginger
  • 1 tsp garam masala
  • 1 tsp salt
  • ½ cup cilantro
  • 1 whole lime

    Grate the 1 medium onion and squeeze out excess liquid. Mince the 2 garlic cloves and 1 inch ginger. In a bowl, mix the ground lamb, grated onion, garlic, ginger, 1 tsp garam masala, and 1 tsp salt until well combined.

    Divide the mixture into 8 portions and shape each around a skewer into a 6-inch log, pressing firmly. If using wooden skewers, soak them in water for 20 minutes first.

    Heat a grill pan or skillet over medium-high heat. Cook the kebabs for 10-12 minutes, turning every 2-3 minutes, until browned on all sides and cooked through (no pink inside).

    While kebabs cook, slice the remaining onion into rings and cut the lime into wedges. Roughly chop the cilantro leaves.

    Serve the hot kebabs with the onion rings, lime wedges, and a sprinkle of cilantro. Squeeze lime over the top before eating.
