Ingredients
- 1.5 lb lamb leg or shoulder, cut into 1-inch cubes
- 3 tbsp olive oil
- 1 lemon, juiced
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 8 wooden skewers, soaked in water for 30 minutes

In a large bowl, combine the 3 tbsp olive oil, juice of 1 lemon, 3 minced garlic cloves, 1 tsp salt, and 1/2 tsp black pepper. Whisk until well blended.

Add the 1.5 lb lamb cubes to the marinade and toss to coat evenly. Cover and let marinate at room temperature for 20 minutes, or up to 2 hours in the fridge for deeper flavor.

Preheat your grill or grill pan over medium-high heat. Thread the marinated lamb onto the 8 soaked skewers, dividing evenly, leaving a small gap between pieces for even cooking.

Place the skewers on the hot grill. Cook for 8-10 minutes total, turning every 2-3 minutes, until the lamb is nicely charred on the outside and reaches your desired doneness (about 135°F for medium-rare).
