Ingredients

  • 1.5 lb lamb leg or shoulder, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. 1

In a large bowl, combine the 3 tbsp olive oil, juice of 1 lemon, 3 minced garlic cloves, 1 tsp salt, and 1/2 tsp black pepper. Whisk until well blended.

  2. 2

Add the 1.5 lb lamb cubes to the marinade and toss to coat evenly. Cover and let marinate at room temperature for 20 minutes, or up to 2 hours in the fridge for deeper flavor.

  3. 3

Preheat your grill or grill pan over medium-high heat. Thread the marinated lamb onto the 8 soaked skewers, dividing evenly, leaving a small gap between pieces for even cooking.

  4. 4

Place the skewers on the hot grill. Cook for 8-10 minutes total, turning every 2-3 minutes, until the lamb is nicely charred on the outside and reaches your desired doneness (about 135°F for medium-rare).

  5. 5

Remove the skewers from the grill and let them rest for 5 minutes. Serve hot, with a squeeze of lemon or a sprinkle of fresh herbs if you like.

  6. 6

Enjoy your smoky, tender lamb skewers straight off the grill!
