Ingredients
- 1 lb beef chuck, cut into 3/4-inch cubes
- 2 tbsp olive oil
- 1 medium onion, diced
- 14.5 oz canned diced tomatoes
- 15 oz canned chickpeas, drained and rinsed
- 4 cups beef broth
- 3.5 tsp spice blend (2 tsp ground cumin, 1 tsp ground cinnamon, 1/2 tsp paprika)

Heat oil in a large pot over medium-high until shimmering, about 90 seconds.

Add beef cubes in a single layer. Sear without moving for 3 minutes until browned on one side.

Stir beef and cook 2 more minutes, then remove to a plate.

Add diced onion to the pot. Sauté until softened and translucent, about 4 minutes.

Stir in spice blend until fragrant, about 30 seconds.

Pour in tomatoes and broth. Return beef to the pot and bring to a simmer.
