Ingredients

  • 1 lb beef chuck, cut into 3/4-inch cubes
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 14.5 oz canned diced tomatoes
  • 15 oz canned chickpeas, drained and rinsed
  • 4 cups beef broth
  • 3.5 tsp spice blend (2 tsp ground cumin, 1 tsp ground cinnamon, 1/2 tsp paprika)

Instructions

    Heat oil in a large pot over medium-high until shimmering, about 90 seconds.

    Add beef cubes in a single layer. Sear without moving for 3 minutes until browned on one side.

    Stir beef and cook 2 more minutes, then remove to a plate.

    Add diced onion to the pot. Sauté until softened and translucent, about 4 minutes.

    Stir in spice blend until fragrant, about 30 seconds.

    Pour in tomatoes and broth. Return beef to the pot and bring to a simmer.

    Reduce heat to low and simmer uncovered for 25 minutes until beef is very tender.

    Stir in chickpeas and simmer 3 more minutes until heated through.

    Taste and season with salt and pepper. Serve hot in bowls.
