Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 1 cup brown lentils, rinsed
  • 5 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 to taste salt and black pepper to taste

Instructions

    Dice the onion, carrot, and celery into 1/4-inch pieces. Mince the garlic.

    Heat olive oil in a large pot over medium until shimmering, about 90 seconds.

    Add onion, carrot, and celery. Sauté, stirring occasionally, until softened, 5 minutes.

    Stir in garlic and cook for 30 seconds until fragrant.

    Add lentils and broth. Bring to a boil, then reduce heat to low.

    Simmer uncovered, stirring occasionally, until lentils are tender, 20–25 minutes.
