Ingredients

- 1 medium onion, diced
- 1 medium carrot, diced
- 1 stalk celery, diced
- 1 cup brown lentils, rinsed
- 5 cups vegetable broth
- 2 cloves garlic, minced
- 1 to taste salt and black pepper to taste

Heat olive oil in a large pot over medium until shimmering, about 90 seconds.
