Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion
  • 2 stalks celery
  • 4 cloves garlic
  • 2 cans (15 oz each) canned white beans (cannellini or great northern), drained and rinsed
  • 4 cups vegetable broth
  • 1 to taste salt and black pepper
  • 3 tbsp fresh herbs (parsley or thyme, chopped)

Instructions

    Dice onion into 1/2-inch pieces. Slice celery into 1/4-inch half-moons. Mince garlic.

    Heat olive oil in a large pot over medium heat until shimmering, about 90 seconds.

    Add onion and celery; cook, stirring often, until softened and translucent, ~5 minutes.

    Add garlic; stir constantly until fragrant, about 1 minute.

    Pour in beans and broth. Bring to a simmer over medium heat, stirring occasionally.

    Simmer uncovered for 10 minutes so flavors meld. Season with salt and pepper to taste.
