Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup red lentils
- 4 cups vegetable broth
- ½ whole lemon (juiced)

Heat oil in a large pot over medium. Add onion and cook, stirring occasionally, until soft, ~5 minutes.

Add garlic and stir until fragrant, about 30 seconds.

Add lentils and broth. Bring to a boil, then reduce heat to medium-low.

Simmer uncovered until lentils break down and soup thickens, 15–18 minutes.
