Ingredients

  • 1 cup red lentils
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp lemon juice

Instructions

    Heat olive oil in a large pot over medium-high heat. Add onion and garlic, stir, until fragrant, about 2 minutes.

    Add lentils, broth, and tomatoes. Bring to a boil, then reduce heat to medium.

    Simmer uncovered for 15 minutes until lentils are soft and soup thickens slightly. Stir occasionally.
