Ingredients
- 2 boneless, skinless, ~6 oz each chicken breast
- 12 oz frozen fries
- ½ small, cut into 1-inch spears fresh pineapple
- ½ cup (3 tbsp olive oil, 2 tbsp lime juice, 2 tbsp orange juice, 3 cloves garlic minced, 0.5 tsp cumin, salt & pepper) mojo marinade
- 1 medium, sliced sliced tomatoes
- 1 cup shredded lettuce

Preheat oven to 425°F. Mix olive oil, lime juice, orange juice, minced garlic, cumin, salt, and pepper in a bowl.

Pat chicken dry. Rub both breasts with half the mojo mixture. Spread fries and pineapple on a sheet pan.

Drizzle fries and pineapple with remaining mojo. Nestle chicken on top. Roast until chicken reaches 165°F and fries are golden, ~18 minutes.

Arrange tomato slices and lettuce on plates. Slide chicken, fries, and pineapple onto each plate. Serve immediately.
