Ingredients
- 2 medium (about 6 oz each) chicken breasts, boneless skinless
- 2 whole plantains (green), peeled and cut into 1-inch rounds
- ¼ cup fresh lime juice
- 4 cloves garlic, minced
- 1 tsp cumin
- 6 oz chorizo sausage, sliced into 2-inch pieces

Heat 1 tbsp oil in a large skillet over medium-high. Fry plantain rounds 2 minutes per side until golden, then remove and set aside for second fry.

Pat chicken dry. Mix lime juice, minced garlic, cumin, and 2 tbsp oil in a bowl, then coat chicken on both sides.

Sear chicken 5 minutes per side in the same skillet without moving—edges should look golden and meat firm when pressed.

Push chicken to the side, add chorizo pieces, and cook 3 minutes until edges brown and fat renders slightly.

Fry plantain rounds a second time, 1 minute per side until crispy and caramelized, then add back to skillet.
