Ingredients

  • 4 thighs boneless chicken thighs
  • 1 whole orange (zested and juiced)
  • 1 whole lime (juiced)
  • 3 cloves garlic, minced
  • 12 oz frozen french fries
  • 1.5 cups fresh pineapple, cut into 1-inch chunks
  • 2 cups shredded lettuce and sliced tomatoes

Instructions

    Toss chicken with orange zest, orange juice, lime juice, and minced garlic. Let sit 5 minutes.

    Spread fries and pineapple on a sheet pan. Drizzle with oil, salt, and pepper.

    Nestle marinated chicken among fries and pineapple. Roast at 425°F for 18 minutes until chicken is cooked through.

    Remove from oven. Chicken should reach 165°F; fries should be golden and crispy.
