Ingredients
- 8 oz pork tenderloin or loin chops
- 3 tbsp white miso paste
- 7 oz fresh ramen noodles
- 4 cups dashi stock or vegetable broth
- 2 whole scallions, sliced
- 1 tbsp ginger, minced
Instructions

Slice pork into 1/4-inch-thick pieces. Pat dry with paper towels.

Bring broth to a boil in a large pot over high heat, ~5 minutes.

Add pork slices and ginger. Simmer until pork is cooked through, ~3 minutes.

Whisk miso paste with 2 tbsp warm broth in a small bowl until smooth, then stir into the pot.

Add ramen noodles and cook until tender, ~3 minutes. Do not boil hard or noodles will fall apart.
