Black Garlic Pork Ramen

Ingredients

  • ½ lb pork belly or boneless pork shoulder, thinly sliced
  • 3 tbsp black garlic paste (or mashed black garlic)
  • 4 cups chicken or dashi broth
  • 2 tbsp soy sauce
  • 8 oz fresh ramen noodles
  • 2 stalks scallions, thinly sliced

Instructions

    Bring broth to a boil in a large pot. Whisk in black garlic paste and soy sauce until smooth.

    Add ramen noodles and cook until just tender, about 3–4 minutes. Stir occasionally to separate.

    Heat a skillet over medium-high until shimmering. Sear pork slices 60 seconds per side without stirring.

    Transfer pork to a plate. Slide it into the simmering broth and turn off the heat.

    Divide noodles and broth between two bowls. Top with seared pork and sliced scallions.
