Ingredients

  • 6 oz pork belly, sliced 1/4-inch thick
  • 3 tbsp white miso paste
  • 1 tbsp soy sauce
  • 2 nests ramen noodles (fresh or dried)
  • 2 whole eggs
  • 2 stalks green onion, sliced

Instructions

  1. 1

Sear pork belly in a large pot over medium-high heat until edges are golden and crispy, about 3 minutes per side.

  2. 2

Pour 4 cups water into the pot. Whisk in miso and soy sauce until smooth and no lumps remain.

  3. 3

Bring broth to a boil, then add ramen noodles. Cook until al dente, stirring occasionally, about 3 minutes.

  4. 4

Gently slide eggs into the broth. Simmer until whites set but yolks still jiggle, about 2 minutes.

  5. 5

Divide noodles and broth between two bowls. Top with pork belly, egg, and green onion.
