Ingredients
- 1.5 lbs chicken thighs, boneless skinless
- 3 tbsp miso paste (white or red)
- 2 tbsp butter
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 4 stalks scallions, chopped
- 2 tsp sesame seeds

Pat chicken dry with paper towels. Season generously with salt and black pepper on both sides.

Heat 1 tbsp olive oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Sear chicken 5–6 minutes per side without moving. Skin should be golden; meat cooked through.

Push chicken to the side. Add garlic to the empty space; cook for 30 seconds until fragrant.

Whisk miso paste, butter, soy sauce, and rice vinegar in a small bowl until smooth.

Pour miso mixture over chicken. Simmer for 2–3 minutes, spooning sauce over chicken to coat.

Remove from heat. Scatter scallions and sesame seeds over the top.

Serve chicken with sauce spooned over it. Accompany with steamed rice or vegetables.
