Ingredients
- 3 cups cooked rice (day-old or cold)
- 2 whole eggs
- 3 tbsp soy sauce
- 1 whole shallot, minced
- 2 whole garlic cloves, minced
- 1 whole cucumber, sliced into rounds
- 1 tbsp white vinegar

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add shallot and garlic, cook 30 seconds until fragrant, then add cold rice, breaking up clumps with a spoon.

Stir-fry rice 4–5 minutes until edges start to brown and crisp. Pour soy sauce and vinegar over, toss to coat.

Push rice to the side. Crack both eggs into the empty space, let them set 30 seconds, then scramble and mix into the rice.
