Ingredients

  • 3 cups cooked rice (day-old or cold)
  • 2 whole eggs
  • 3 tbsp soy sauce
  • 1 whole shallot, minced
  • 2 whole garlic cloves, minced
  • 1 whole cucumber, sliced into rounds
  • 1 tbsp white vinegar

Instructions

  1. 1

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

  2. 2

Add shallot and garlic, cook 30 seconds until fragrant, then add cold rice, breaking up clumps with a spoon.

  3. 3

Stir-fry rice 4–5 minutes until edges start to brown and crisp. Pour soy sauce and vinegar over, toss to coat.

  4. 4

Push rice to the side. Crack both eggs into the empty space, let them set 30 seconds, then scramble and mix into the rice.

  5. 5

Cook 1 more minute until eggs are fully cooked, stirring gently. Taste and adjust salt if needed.

  6. 6

Transfer to a plate, top with cucumber slices, and serve immediately while rice is still crispy.
