Ingredients

  • 4 links merguez sausages
  • 2 medium red and yellow bell peppers
  • 2 pieces soft sub rolls or baguette
  • 2 tbsp harissa paste
  • 3 tbsp mayonnaise
  • 1 tbsp olive oil

    Cut peppers into thick strips, removing stems and seeds.

    Stir harissa and mayonnaise together until combined.

    Heat olive oil in a large skillet over medium-high until it shimmers, ~60 seconds.

    Add merguez sausages. Sear without moving for 4 minutes until deep brown on one side.

    Flip sausages, then add pepper strips to the skillet around them.

    Cook 4 minutes more, stirring peppers occasionally, until peppers soften and edges char.

    Spread harissa mayo inside rolls. Divide sausages and peppers between sandwiches.

    Serve immediately while sausages are still hot and skins are crispy.
