Ingredients
- 4 links merguez sausages
- 2 pieces crusty sandwich rolls or baguette
- 3 tbsp mayonnaise
- 1 tbsp harissa paste
- 1 medium tomato
- 1 small handful lettuce or arugula

Stir mayonnaise and harissa together in a small bowl until smooth and evenly colored.

Slice tomato into 4 rounds. Split rolls lengthwise without cutting all the way through.

Heat a skillet over medium-high until hot, ~1 minute. Add sausages and sear without moving for 2–3 minutes.

Roll sausages to cook all sides, then remove when browned and internal temp hits 160°F, ~5 minutes total.

Spread harissa aioli on both sides of each roll. Layer lettuce, tomato, then 2 sausages per sandwich.
