Ingredients
- 4 links merguez sausages
- 2 pieces crusty sandwich rolls or flatbread
- 2 tbsp harissa paste
- ¼ cup Greek yogurt
- ½ cup roasted red peppers (jarred)
- ⅓ cup feta cheese, crumbled
- 3 tbsp fresh cilantro, chopped
- ½ piece lemon

Stir harissa and yogurt together until smooth. Taste and adjust spice with extra harissa if desired.

Heat olive oil in a skillet over medium-high until shimmering, about 90 seconds.

Sear merguez sausages without moving until deep brown on one side, 2–3 minutes.

Flip and char the other side until the surface is blackened and cooked through, 2–3 minutes more.

Spread harissa-yogurt inside each bread. Layer roasted peppers, sausages, feta, and cilantro.

Squeeze lemon juice over the top and serve hot.
