Ingredients
- 4 count merguez sausages (lamb)
- 2 count crusty rolls or baguette
- 3 tbsp mayonnaise
- 1 tbsp harissa paste
- 1 medium fresh tomato, sliced
- 2 tbsp fresh cilantro (chopped)

Stir harissa into mayo until fully blended. Set aside.

Slice rolls in half lengthwise. Set up your workspace with rolls and toppings.

Heat olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add merguez and cook without moving for 3 minutes until deep brown on one side.

Roll sausages and continue cooking 2–3 minutes until caramelized on all sides and cooked through.
