Ingredients
- 4 links lamb merguez sausages
- 1 whole red bell pepper
- 3 tbsp mayonnaise
- 1 tbsp harissa paste
- 2 whole sandwich rolls or baguette
- ¼ cup fresh cilantro, chopped
- ½ whole lemon

Whisk together mayonnaise and harissa paste in a small bowl until smooth.

Heat oil in a large skillet over medium-high until shimmering. Add merguez and sear until deeply browned and cooked through, turning occasionally, ~8 minutes.

Slice the bell pepper into thick rings, remove seeds. Push sausages to the side, add pepper rings to the hot skillet. Sear until charred, ~3 minutes per side.

Split rolls and toast them cut-side down in the skillet until golden, ~90 seconds.

Spread harissa mayo on each toasted roll. Layer merguez, charred peppers, cilantro, and a squeeze of lemon juice.
