Ingredients
- 4 links merguez sausages
- 1 medium red onion
- 1 large red bell pepper
- 2 pieces sandwich rolls or flatbread
- 2 tbsp harissa paste
- 3 tbsp mayonnaise
- 2 tbsp fresh cilantro or parsley, chopped

Slice onion into 1/4-inch thick rings. Cut bell pepper into 1-inch strips.

Stir harissa and mayonnaise together in a small bowl until combined.

Heat oil in a large skillet over medium-high until shimmering, ~90 seconds.

Sear merguez 3 minutes per side without moving until browned and cooked through.

Transfer sausages to a plate. Add onion and pepper to the same skillet.

Cook vegetables 4–5 minutes, stirring occasionally, until soft and lightly charred.

Spread harissa mayo inside each roll. Layer with a sausage and half the vegetables.
