Ingredients
- 4 links merguez sausages
- 2 pieces soft sandwich rolls or baguette
- 2 tbsp harissa paste
- 3 tbsp mayonnaise
- ½ medium red onion
- 2 tbsp red wine vinegar

Thinly slice the red onion. Toss with vinegar and a pinch of salt; set aside to quick-pickle.

Stir harissa into mayonnaise until smooth. Set aside.

Heat a skillet over medium-high. Sear merguez 3–4 minutes per side until browned and cooked through.

Split the rolls and spread harissa mayo on both sides.

Nestle 2 merguez into each roll. Top with pickled onions and any drippings from the pan.
