Ingredients

  • 4 count flour tortillas
  • 2 cups fresh spinach
  • 1.5 cups mozzarella cheese, shredded

Instructions

    Heat a large skillet over medium-high until a drop of water sizzles on contact, ~90 seconds.

    Add spinach to the skillet and stir until completely wilted and any excess water evaporates, ~2 minutes.

    Lay one tortilla on a plate, spread half the spinach on one half, top with half the mozzarella.

    Fold tortilla in half and slide onto the skillet, cooking until edges are golden and cheese melts, ~3 minutes per side.

    Repeat with remaining tortillas, spinach, and cheese.
