Ingredients

  • 4 medium potatoes
  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 cups tomato sauce
  • 2 tbsp butter

Instructions

    Peel and chop the 4 potatoes into chunks. Boil in salted water until fork-tender, about 15 minutes.

    While potatoes cook, mix the 1 lb ground beef, 0.5 cup breadcrumbs, and 1 egg in a bowl. Season with salt and pepper. Roll into 1-inch meatballs.

    Heat a large skillet over medium-high. Add the meatballs and cook until browned on all sides, about 5 minutes.

    Pour the 2 cups tomato sauce over the meatballs. Simmer until meatballs are cooked through and sauce thickens slightly, about 10 minutes.

    Drain the potatoes and mash with the 2 tbsp butter and a splash of milk (or water). Season with salt. Serve meatballs and sauce over the mashed potatoes.
