Ingredients

  • 1.5 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • ½ medium onion
  • 1.5 cups tomato sauce
  • 1 cup shredded mozzarella cheese
  • 8 oz egg noodles
  • 2 tbsp parsley

Instructions

  1. 1

Preheat oven to 375°F. In a large bowl, combine 1.5 lb ground beef, 0.5 cup breadcrumbs, 1 egg, 0.5 finely chopped onion, and 0.5 cup tomato sauce. Mix until just combined.

  2. 2

Shape the mixture into a loaf and place in a 9x5 inch loaf pan. Bake for 35-40 minutes, until the internal temperature reaches 160°F and the top is browned.

  3. 3

Meanwhile, cook 8 oz egg noodles according to package directions until al dente, about 7-8 minutes. Drain and set aside.

  4. 4

After the meatloaf is cooked, spread the remaining 1 cup tomato sauce over the top and sprinkle with 1 cup shredded mozzarella cheese.

  5. 5

Return to the oven and bake for 5-7 minutes, until the cheese is melted and bubbly. Let rest for 5 minutes before slicing.

  6. 6

Serve the meatloaf slices over the cooked noodles, garnished with 2 tbsp chopped parsley.
