- ½ cup breadcrumbs
- 1 large egg
- ½ medium onion
- 1.5 cups tomato sauce
- 1 cup shredded mozzarella cheese
- 8 oz egg noodles
- 2 tbsp parsley

Preheat oven to 375°F. In a large bowl, combine 1.5 lb ground beef, 0.5 cup breadcrumbs, 1 egg, 0.5 finely chopped onion, and 0.5 cup tomato sauce. Mix until just combined.

Shape the mixture into a loaf and place in a 9x5 inch loaf pan. Bake for 35-40 minutes, until the internal temperature reaches 160°F and the top is browned.

Meanwhile, cook 8 oz egg noodles according to package directions until al dente, about 7-8 minutes. Drain and set aside.

After the meatloaf is cooked, spread the remaining 1 cup tomato sauce over the top and sprinkle with 1 cup shredded mozzarella cheese.
