Ingredients
- 6 pieces (about 2 lbs) chicken thighs, bone-in and skin-on
- 1.5 lbs sweet potatoes, cut into 1-inch chunks
- 3 tbsp maple syrup
- 3 tbsp lime juice, freshly squeezed

Heat oven to 425°F and line a sheet pan with parchment paper.

Toss chicken thighs and sweet potatoes with 2 tbsp olive oil, salt, and pepper.
