Ingredients
- 10 oz sushi-grade tuna block
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sake
- 1.5 cups cooked sushi rice
- 2 sheets nori sheets, cut into strips

Combine soy sauce, mirin, and sake in a small bowl. Stir until mirin dissolves.

Pat tuna dry with paper towels. Season both sides lightly with salt and pepper.

Heat oil in a skillet over high heat until it shimmers, about 90 seconds.

Sear tuna 60 seconds per side without moving. Center should remain raw.

Slice tuna into 1/4-inch-thick strips against the grain.
