Ingredients

  • 10 oz sushi-grade tuna block
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1.5 cups cooked sushi rice
  • 2 sheets nori sheets, cut into strips

Instructions

    Combine soy sauce, mirin, and sake in a small bowl. Stir until mirin dissolves.

    Pat tuna dry with paper towels. Season both sides lightly with salt and pepper.

    Heat oil in a skillet over high heat until it shimmers, about 90 seconds.

    Sear tuna 60 seconds per side without moving. Center should remain raw.

    Slice tuna into 1/4-inch-thick strips against the grain.

    Pour marinade into the skillet. Add tuna and gently toss to coat, 20 seconds.

    Divide rice between two bowls. Top with tuna, nori strips, and sesame seeds.
