Ingredients

  • ½ lb pork longaniza (Filipino sausage), casings removed
  • 2 cups cooked white rice (day-old, chilled preferred)
  • 4 cloves garlic, minced
  • 2 whole eggs
  • 3 tbsp olive oil
  • 0 salt and black pepper to taste

Instructions

  1. 1

Heat 1 tbsp oil in a 12-inch skillet over medium-high. Add longaniza meat, breaking it into small pieces, and cook until browned, ~5 minutes.

  2. 2

Push sausage to the side. Add garlic to the cleared space and cook until fragrant, ~30 seconds.

  3. 3

Add rice, breaking up clumps, and stir constantly with the sausage until heated through, ~3 minutes.

  4. 4

Push rice mixture to edges. Add remaining 2 tbsp oil to the center and crack both eggs into the pool.

  5. 5

Cook without stirring until whites set but yolks still jiggle, ~3 minutes. Season with salt and pepper.

  6. 6

Divide between plates and serve immediately, with eggs centered on top.
