Ingredients
- ½ lb pork longaniza (Filipino sausage), casings removed
- 2 cups cooked white rice (day-old, chilled preferred)
- 4 cloves garlic, minced
- 2 whole eggs
- 3 tbsp olive oil
- 0 salt and black pepper to taste

Heat 1 tbsp oil in a 12-inch skillet over medium-high. Add longaniza meat, breaking it into small pieces, and cook until browned, ~5 minutes.

Push sausage to the side. Add garlic to the cleared space and cook until fragrant, ~30 seconds.

Add rice, breaking up clumps, and stir constantly with the sausage until heated through, ~3 minutes.

Push rice mixture to edges. Add remaining 2 tbsp oil to the center and crack both eggs into the pool.

Cook without stirring until whites set but yolks still jiggle, ~3 minutes. Season with salt and pepper.
