Ingredients

  • ½ lb longanisa sausage, sliced into 1/4-inch rounds
  • 2 cups cooked rice (day-old or cooled)
  • 4 cloves garlic, minced
  • 2 whole eggs
  • 1 tbsp fish sauce
  • 3 tbsp oil for cooking

Instructions

  1. 1

    Heat 1 tbsp oil in a large skillet over medium-high. Add longanisa and cook until edges crisp, ~5 minutes. Transfer to a plate.

    In the same skillet, add remaining oil and minced garlic. Stir-fry until fragrant, about 30 seconds.

    Add rice, breaking up clumps with a spoon. Stir-fry for 3–4 minutes until rice is heated through and edges look slightly crispy.

    Add fish sauce and stir to combine. Push rice to the sides of the skillet, creating two wells in the center.

    Crack eggs into the wells. Cover skillet loosely and cook until whites are set but yolks jiggle, ~3 minutes.

    Scatter cooked longanisa over the rice. Serve immediately in a bowl or on a plate.
