Ingredients

  • 8 oz pork tocino (or cubed pork belly / shoulder), thawed if frozen
  • 2 cups cooked white rice, cold or room temp
  • 6 cloves garlic, minced
  • 2 whole eggs
  • 1 tbsp soy sauce
  • 2 tbsp green onion, sliced

Instructions

  1. 1

Heat 1 tbsp oil in a large skillet over medium-high until shimmering. Add pork, stirring occasionally, until deeply browned and crispy, ~6 minutes.

  2. 2

Push pork to the side. Add minced garlic to the empty space, cook 30 seconds until fragrant.

  3. 3

Add cold rice, breaking up clumps, and stir constantly until every grain is coated and edges start to brown, ~4 minutes.

  4. 4

Drizzle soy sauce over rice, toss once. Push everything to the sides, creating two wells in the center.

  5. 5

Crack eggs into the wells. Cook without stirring until whites set but yolks jiggle slightly, ~3 minutes.

  6. 6

Scatter green onion over top. Divide between plates and serve immediately.
