Ingredients
- 8 oz pork tocino (or cubed pork belly / shoulder), thawed if frozen
- 2 cups cooked white rice, cold or room temp
- 6 cloves garlic, minced
- 2 whole eggs
- 1 tbsp soy sauce
- 2 tbsp green onion, sliced

Heat 1 tbsp oil in a large skillet over medium-high until shimmering. Add pork, stirring occasionally, until deeply browned and crispy, ~6 minutes.

Push pork to the side. Add minced garlic to the empty space, cook 30 seconds until fragrant.

Add cold rice, breaking up clumps, and stir constantly until every grain is coated and edges start to brown, ~4 minutes.

Drizzle soy sauce over rice, toss once. Push everything to the sides, creating two wells in the center.

Crack eggs into the wells. Cook without stirring until whites set but yolks jiggle slightly, ~3 minutes.
