Ingredients

  • 2 cups cooked white rice (day-old or cooled)
  • 4 links (about 8 oz) longaniza sausage links
  • 4 cloves garlic, minced
  • 2 large eggs
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • ½ tsp each salt and black pepper

Instructions

    Heat 1 tbsp oil in a 10-inch skillet over medium-high heat until shimmering.

    Add longaniza links and pan-fry until browned on all sides and cooked through, 8–10 minutes.

    Transfer sausages to a plate. Drain all but 1 tbsp of fat from the skillet.

    Return skillet to medium-high heat. Add minced garlic and cook until fragrant, 30–45 seconds.

    Add rice, breaking up clumps with a spoon, and stir-fry for 3–4 minutes until heated through.

    Pour soy sauce over rice and stir well. Season with salt and pepper. Transfer to plates.

    Add remaining 2 tbsp oil to the skillet over medium-high heat. Crack both eggs into the pan.

    Fry until whites set but yolks still jiggle, 3–4 minutes. Slide one egg onto each rice plate.

    Top each plate with 2 longaniza links. Serve immediately.
