Ingredients

  • 2 packs instant Korean ramyeon noodles
  • 4 cups water
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 2 whole eggs
  • ¼ cup crispy fried onions (or panko breadcrumbs fried in neutral oil)
  • 2 stalks fresh scallion, sliced

Instructions

    Bring water to a boil in a large pot over high heat.

    While water heats, whisk gochujang, soy sauce, and minced garlic in a small bowl until smooth.

    Once water boils, add ramyeon noodles and cook for 3 minutes, stirring to separate.

    Stir gochujang mixture into the pot, then crack both eggs directly into the broth and let simmer until whites set, ~2 minutes.

    Divide noodles and broth between 2 bowls, placing one egg in each.

    Top with crispy fried onions and sliced scallion, then serve immediately.
