Ingredients
- 4 count sausage links
- 12 oz potatoes, diced small
- ½ medium yellow onion, chopped
- 4 large eggs
- ½ cup sharp cheddar, shredded
- 2 tbsp fresh parsley or chives, chopped

Heat a 12-inch skillet over medium-high. Brown sausage links until cooked through, ~6 minutes. Slice and set aside.

Add diced potatoes and onion to the same skillet with 2 tbsp oil. Fry until potatoes are golden and crispy, ~8 minutes, stirring occasionally.

Return sausage to the skillet. Scatter cheddar over the top, then crack eggs directly onto the mixture.

Cover and cook over medium heat until whites set but yolks still jiggle, ~3 minutes.
